A scathing report is surfacing about Tina Knowles’ restaurant. The mother of singing sensation Beyoncé had a pop-up eatery on display in Houston this month. That place was shut down following a disturbing complaint registered by a customer.
Mama Tina’s Gumbo was among the eating spots open at the Houston Rodeo last week. A chilling customer complaint, however, prompted the health department to investigate their food standards further. Apparently, Tina’s business didn’t meet several requirements.

It’s hardly a ringing endorsement. Reports indicate that one dissatisfied customer apparently vomited up blood after consuming one of the gumbo dishes at Tina’s eatery. Along with that they claim to have experienced chills, nausea and a fever. KPRC 2 News in Houston obtained the records of this matter from the Houston Health Department.
The department’s findings found that some of the food at the eatery was cooked off-site, cooled down and stuffed into non-food-grade orange buckets. After that, the food reportedly was transported to a refrigerated trailer, then thawed and served. Allegedly, Tina didn’t keep temperature logs showing the cooling or storing times of the gumbo.
Meanwhile, reports show the food source for day one of the rodeo was not listed on the approved permit application. At the same time, the food prepared over a day before serving wasn’t dated. As such, the restaurant was shut down. Last April, Tina was reportedly angry about Beyoncé’s pregnancy. This was because of all the gossip it had received.
The restaurant closure is a wake-up call for Tina about what is and what is not acceptable. Health inspectors educated her and the staff on rapid cooling and thawing methods, as well as date-marking instructions. Operators reportedly agreed to stop preparing food off-site. Along with that, they switched to a freezer trailer from a refrigerated one. Mama Tina’s Gumbo was cleared to open the day after the shutdown.
